This is a sunday morning event and is one of my favourite foods. The omelette is made with one egg and filled with a generous serve of smoked salmon and cream cheese. In summer, the additionof fresh chives make this meal extra-special. It is normally served with two slices of wholemeal toast and butter.

The fluffy omelette is a refined version of an ancient food. According to Alan Davidson,[1] the French word omelette came into use during the mid-16th century, but the versions alumelle and alumete are employed by the Ménagier de Paris (II, 5) in 1393.[2]
